    Hugo Desnoyer是法國首屈一指的星級屠宰師(butcher)，在巴黎十四區以自己之名經營肉店，售賣各種優質豬牛羊和家禽。

    他不止擅於切割，更走訪法國各地農場，精挑細選靚肉，非天然放養不用。再自行把肉類熟成，水準超班，米芝蓮名廚如Pierre Gagnaire、Joel Robuchon都爭相採用。
    大師將於6月21日至23日駕臨香港Petrus。期間餐廳會供應以他帶來法國豬蹄、豬臉肉、小牛尾、小牛胸腺(veal sweetbread)等入饌的菜式。
    三道菜晚餐每位$980、五道菜$1,280，只此三日，想一嘗頂級肉食的，不可錯過。
